Malabar chicken curry is a traditional Kerala delicacy made with tender chicken simmered in a fragrant blend of roasted spices, coconut, and aromatic herbs. Rich, mildly spiced, and full of authentic Malabar flavours, it pairs perfectly with appam, pathiri, parotta, or steamed rice.

INGREDIENTS:
- Chefs base Malabar gravy - 200g
- Chicken - 500g
- Water - 600ml
- Cashew paste - 30g
- Coconut milk powder - 50g
- Shallot - 35g
- Curry leaves - 2g
- Dry chilli whole - 2pcs
- Kashmiri chilli powder A pinch
- Coconut oil - 35g
MAKE IT READY
- Coconut milk: Thoroughly whisk coconut milk powder in 80 ml of water until the mixture is uniform and completely free of lumps. set aside.
- Cashew paste: Combine 50g cashew pieces with 100g water. Transfer to a mixer jar and grind to fine paste.
PREPARATION
- Transfer Malabar gravy into a pan and bring it to a gentle sauté.
- Toss the chicken pieces and sauté thoroughly until well coated.
- Pour water and stir evenly. Cover and lower the heat to simmer.
- Once the chicken is fully cooked, stir in cashew paste and let it bubble for 2-3 minutes.
- Turn off the heat and set the pan aside.
- Heat coconut oil in another pan, sauté shallot till golden brown.
- Toss the curry leaves, red chilli whole and a pinch of Kashmiri chilli powder.
- Pour this sizzling tempering over the gravy, mix gently and serve hot.
